I agree that language selection would be helpful. Should be easy to implement, so I’ll add it to the next planned release cycle.
However, Greek is problematic, unfortunately: Consul uses native macOS OCR (through VNRecognizeTextRequest), which doesn’t support Greek. Consul would need to bundle a third-party OCR engine for Greek and other languages that are not supported by macOS. I’ll therefore split this into two feature requests: Keeping this one as the language selection feature that’ll be shipped soon, and opening another one for an alternative OCR engine for additional languages such as OCR.
